Healthy Easy Dinner Recipes: Spanish Meatballs
Serves 4
Ingredients
• 500 g lean organic minced meat
• 1 large organic or free-range egg
• 2 400g cans chopped tomatoes
• 2 organic beef bouillon cubes
• 1 liter boiling water
• Dried herbs de Provence (or a good selection of dried mixed herbs)
• 1 white onion, finely chopped
• 1 garlic clove, finely chopped, extra virgin olive oil or coconut oil, salt and ground black pepper
Method:
1. Mix the minced meat with the egg and half of the chopped onion. Season with 1 bouillon cube and black pepper.
2. Roll the mixture into ping pong-sized balls with your hands and fry in oil until almost cooked (the meatballs may still be light).
3. Pink in the middle as they will simmer in the sauce). Be sure to turn them every now and then so they cook evenly.
4. Remove the meatballs and place them on a plate to rest.
5. Drain all but 1 tablespoon of the oil in the pan, reserving the bits of meat left in the bottom of the pan.
6. Add the remaining chopped onion and some minced garlic and fry for another 2 minutes until golden brown.
7. Add the 2 cans of chopped tomatoes and a good pinch of mixed herbs.
8. Add the water and crumble in the last bouillon cube. Season with salt and pepper if necessary.
9. Simmer for about 10-15 minutes until the sauce thickens slightly.
10. Add the meatballs and mix well with the tomato sauce. Let them cook for a few more minutes.
These meatballs are delicious and can be served with some steamed vegetables like broccoli, asparagus, spinach or any other of your favorite vegetables. If you feel like pasta or spaghetti, you can eat it with some “miracle noodles”. These little gems are low calorie and low carb meaning they're perfect if you're carb conscious and looking to shed a few pounds or maybe even if you're looking to lose a stone quickly.
