During my studies of nutrition on college, my friend heard from a teacher that it is easier for a person to change their religion than to change their eating habits.
But the need is the mother of invention. When my father got sick and was taken to the hospital for cancer, I started researching to learn how to protect ourselves and heal from cancer. While I saw "A Delicate Balance" on Vimeo, I heard how nutritionist T. Colin Campbell described the results of the greatest study on nutrition and cancer, as described in his book "The China Study".
A friend gave me the book years ago, but it was a deal breaker because it supported a vegan diet, which meant to give up all animal food including vegetarian food such as cheese and eggs. But in the fight for my father's life, I was ready to do what was necessary, so I read the book and couldn't put it away. My first thought in the end was "knowledge is power".
The premise of the book is that animal protein causes the increase of cancer cells, while vegetable protein causes the shrinkage of cancer cells. This research is based on empirical scientific knowledge and is published in specialist journals. It is described in Chapter 3 of the book and is a convincing place to start your own research. However, research is silenced by lobbyists for the food industry who do not want to have this type of information available.
After reading the China study and finding how many diseases are caused by the “Standard American Diet” or SAD, I swore to become vegan. I seemed to be a simple choice to protect my health from the feared cancer threat.
Although I am an experienced vegetarian, I lacked the ability to prepare delicious vegan food without cheese and eggs. I have committed myself to the health advantages of a vegan diet, enrolled myself in the vegan cooking school and trained with a vegan master chef for three weeks.
I lived exclusively from vegan food during the entire cooking school. The first thing you notice is the amazing energy that is obtained by eating fresh, healthy food. Antioxidants color the fruit and vegetables that strengthen our own systems.
When people inevitably ask where our protein comes from, one expert answers: "I get my protein from the same place where your protein receives his protein." Leaf vegetables, grain, nuts, legumes, beans and seeds are some sources of protein on a plant -based basis.
And the best thing is that the food tastes great. Cashew cheese, almond milk and coconut butter are staple foods. Throw tofu cubes with yeast, Tamari and olive oil and bake them for hearty nuggets. Mix the speed for 20 minutes - mix with vegan mayonnaise, garlic, onion, basil and parsley. Place in the pita and imitate a chicken salad sandwich.
