1. Tropical Grilled Chicken with Basil
What you need:

6 boneless, skinless chicken breasts

1/2 cup fresh basil leaves

1/4 cup fresh lemon juice

Pat chicken breasts dry with paper towels and place in a resealable plastic bag. Set aside. Place basil leaves, lemon juice, corn oil, lemon zest, and salt in a blender and pulse until well combined, about 20-30 seconds. Pour the mixture over the chicken and seal. Shake the bag to coat the chicken breasts, then refrigerate for at least 3 hours. When finished, remove the chicken from the bag and discard any excess marinade. Cook in a preheated grill over medium heat for 5-6 minutes per side or until cooked through. If desired, serve warm with an additional garnish of basil leaves.
