Balsamic vinegar and caramelized onions omelett
What you need:

3 eggs

1 white onion, cut into rings

1/2 cup of diced hard cheese of your choice

Olive oil for roasting

Salt and ground black pepper to taste
Heat the olive oil in a pan and cook the onions softly. Put the olive oil in the pan and season with salt. Throw onions, remove from the stove and set aside. Beat the eggs in a bowl with a little salt and pepper. Fry in the same pan and add more olive oil if necessary. Add onions and cheese to the egg just before cooking the eggs and fold it into a crescent moon. Serve immediately.
Spicy Cashew Breakfast Omelette
What you need:
For the omelet:

2 green chilli, chopped

6 large papadums, roasted and broken into large pieces

1 pepper, diced

1 onion, diced

1 cup of mushrooms, chopped

2 tablespoons of chopped celery

2 tablespoons of chopped coriander

1 tablespoon oil

Salt and pepper to taste
For the spicy cashew nuts:

2/3 cup of cashew nuts

2 teaspoon of oil

1 teaspoon paprika
-
1/2 teaspoon of ground cumin

1/2 teaspoon coriander powder

1/2 teaspoon oregano
To make the omelet, beat the eggs in a bowl and stir in the chilies, coriander, salt and pepper. Heat the oil in a pan with the peppers, onions, celery and mushrooms over medium heat until the onions are soft. Pour vegetables into the bowl with the eggs. Fry the omelet until lightly browned underneath. When ready, transfer to a serving plate and cut into strips. To make the spicy cashews, heat the oil in a skillet over medium heat and fry the cashews. Add the paprika, cumin, coriander powder and oregano to the pan and stir until the ingredients are well mixed. Top omelet with spicy cashews.
